Simply chop the vegetables and stir-fry in a large wok or pan while cooking the rice noodles according to package directions. Meanwhile, in a small bowl whisk together 1/2 c. to 3/4 c. of peanut butter with hot water until the peanut butter is thinned to the consistency of a sauce. Then add a little soy sauce to taste, and set aside until the noodles are cooked. Combine noodles, sauce, and veggies and serve.
