Cajun Crab Stew

I found this recipe about a month ago, and have made a variation of it (see below photo) twice already due to its wonderful flavors and easy preparation.

Cajun Crab Stew

(6 – 8 servings)

  • 1/2 stick of butter
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1/4 c. all purpose flour
  • 2 cans of chicken broth
  • 1 pint of half & half
  • 1 package of frozen corn
  • 1 pound of crabmeat, drained
  • 1/2 tsp. white pepper
  • 1/2 tsp. dried thyme
  • 1/4 tsp. cayenne pepper
  1. Melt butter over medium heat, saute onion & garlic until onion is transparent.
  2. Whisk in flour and cook about two minutes.
  3. Carefully whisk in broth and bring to a boil.  Mix in corn and all seasonings.  Reduce heat and simmer about 15 minutes.
  4. Stir in half & half, crabmeat and heat thoroughly.  Serve with fresh bread or popovers.
