Broccoli Mac & Cheese

This isn’t super creative, and doesn’t make for pretty pictures, but it is a very quick and easy way to use up cheese and have an easy dinner and easy lunch leftovers.  Basically make mac and cheese as you normally would, steam some broccoli, and stir the broccoli into the macaroni and cheese mixture before baking.

This might be a good way to get picky kids to eat broccoli…  I also used Ronzoni Vegetable Delight pasta, which boasts a full serving of vegetables in a 4 oz. serving of pasta.  I’m doubtful that this pasta is as nutritious as REAL vegetables, but its package did list more nutrients and fiber than traditional pasta, so I figured it was worth a try.
