After having dinner at Pat’s Pizza, while walking down the stairs to exit the restaurant, I noticed the dessert special: pumpkin white chocolate cheesecake. I was tempted to go back and order a slice to take home, but reined myself in, convincing myself that I did not need that slice of cheesecake after having hungrily consumed half of a pizza… For weeks to follow, I found myself craving pumpkin white chocolate cheesecake, and finally made one for a recent family gathering.
This definitely hit the spot. The flavor was nice, with gingersnap crust, and the texture was soft. I was initially disappointed because the cake cracked down the center while baking, but once it was sliced that didn’t really matter. The recipe can be found on The Love Chef website.
