Shrimp & Lobster Scampi

After seeing Community Little Theater’s production of A Christmas Carol, my parents joined us for a scampi dinner at our house.  They surprised us with lobster meat to add to the scampi, making for a fancier-than-planned-on, yet easy-to-make dinner.

Every time I make scampi, I vary the ingredients a bit so it’s never exactly the same.  This time I added sliced fresh mushrooms while the garlic and onion were cooking in the butter and olive oil.  I also added about 1/4 c. oil packed sun-dried tomatoes.
