Ginger Chicken, Ginger Sweet Potatoes…

The salad is just fresh baby arugula tossed with a homemade dressing made with rice wine vinegar, toasted sesame oil, and diced fresh ginger.  In a pan I sauteed about two tablespoons of fresh ginger in two tablespoons of butter, and brushed a little of this onto sweet potato halves before baking them.  Then in the pan with the remaining ginger and butter, I sauteed the remaining chicken, adding just a little white wine to deglaze the pan after the chicken began to brown.
