84 Court Street Pizza & Restaurant ~ Another Visit, and Another…

We finally tried the pizza (the Athena to be precise) at 84 Court Street and it was a delicious mid-week break from cooking! The crust was fluffier than most pizza crust we’ve had before, and the toppings were very fresh and flavorful.

April Vacation “Room Service”

I have to say that my April vacation turned out to be very different than what I had planned.  I suspected it would end up this way, but had some hopes that our new little member of the family would wait it out until his due date (April 25th) and allow me my hard-earned school vacation week for some resting and nesting.

On Patriot’s Day, I went out to lunch at Mother India with my mother and grandmother (blog post about that later when I have time & energy for it…), and during lunch I asked my mom if she would like to join me for a trip to Freeport.  She proposed going Tuesday, and I jokingly said, “I may not have tomorrow…”  So off to Freeport we went to run a few errands out there.  Little did I know that it really would be my last day of vacation…  I was admitted to the hospital just after midnight, and early Tuesday morning I was given a “room service” menu to choose something for breakfast.

Sesame Ginger Shrimp and Veggies

This dish is easy to prepare, and can be adjusted in a variety of ways.  All you need is raw shrimp, raw vegetables (I used a bagged mix of broccoli, snow peas, carrot shreds from Eat Smart), rice or noodles, ginger, soy sauce, sesame seeds and sesame oil.

Spinach & Cheese Stuffed Bread Inspired by “Kick Up the Spices”

Several weeks ago the staff at my school had the opportunity to purchase this delicious bread from our student cooking group, “Kick Up the Spices”.  After raving about the bread, I was told how simple it is to make.  I’ve made it twice already, and have one more frozen bread loaf in my freezer so I see another stuffed bread in the near dinner future…

Surprise: Salad on the Porch!

We arrived at home one afternoon after a day of errands in the Portland area to find a healthful surprise on our front porch: a bean salad unlike any other I’ve had before!  My first reaction was to wonder what was on our porch, since normally we don’t find food sitting out there…  It turns out that a friend had dropped it off for us with a note–thinking that I might be getting a little tired to be cooking.  I must say it made for a very nice EASY dinner with some bagels that night!

We were sad to see Holly’s Own Deli and Restaurant close, as it had been a place where we had met up with friends many times for dinner and music over the course of several years…  As the restaurant sat empty for a while, we wondered when someone else might make a go of it in this cute little old two-level brick storefront, and what type of business might flourish there.

Ricotta Cookies

When given this recipe by friends, I was warned that it makes enough the feed an army.  They were right, but I did discover that the dough freezes well, and the cookies taste the same, and have the same great soft texture whether baked from fresh or previously frozen dough!

The cookies, on their own, are not too sweet but do have a nice flavor and soft texture that reminds me of the texture of my favorite store-bought sugar cookies made by Lofthouse.  The glaze provides a little sweetness; I chose to add a little vanilla extract to the glaze and was happy with the results.
